Quick, healthy, unconventional German sauerkraut salad with apple and apricot and mustard sauce

SAUCE MADE OF APRICOTS AND MUSTARD: |
apricots 30 g |
warm water 100 ml |
mustard 50 g |
sunflower oil (unrefined) 50 g |
lemon juice 10 g |
salt, pepper to taste |
Step 1
Soak apricots in warm water for 20 minutes. Dry bread slices on a frying pan. Peel the apple from the core, cut into large thin slices, add to the cabbage and pour lemon juice over it. Add the onion sliced in half rings and mix.
Step 2
Prepare the sauce. Add 20 milliliters of water to the apricots (it is better to add the water in which it was soaked), mustard, lemon juice, sunflower oil, salt and pepper. Mix everything with a blender until homogeneous.
Step 3
Serve the salad with croutons and sauce.
