Baked vegetable salad

The perfect summer dish is a light, spicy salad of grilled roasted vegetables with a savory dressing.

Ingredients


eggplant 1 pc
zucchini 1 pc
sweet pepper 1 pc
tomatoes 2 pcs
vegetable oil 20 ml
TO TASTE:
Italian herbs
salt
ground black pepper
FOR SEASONING:
balsamic vinegar 25 ml
mustard (non-spicy) 10 g
soy sauce 10 ml
honey 15 g
garlic 1 clove
olive oil 60 ml
arugula to taste
salt to taste

Instructions


Step 1

Prepare the dressing. Mix the honey with the mustard and olive oil. Add soy sauce, salt, vinegar and minced garlic. Stir to combine.

Step 2

Cut the zucchini, eggplant and peppers lengthwise into 6 pieces, cut the tomato in half. Drizzle the vegetables with oil, season with Italian herbs and mix.

Step 3

Place on a hot grill and grill until crisp.

Step 4

Season the vegetables with pepper and salt. Add the arugula and drizzle with the dressing. Enjoy!
