The flavor of duck breast (if cooked properly, of course) is so tender and incomparable that it does not need any garnish. Unless the roasted fillet can be accompanied by the same caramelized fruits - apple and pear.

Ingredients


duck breast (with skin) 1 pc
apple 1 pc
pear 1 pc
sugar 1 tbsp.
butter 1 tsp.
balsamic vinegar 1 tsp.
pink pepper 10 peas

Instructions


Step 1

Rinse the duck breast under cold water and pat dry with a paper towel. With a sharp knife, cut the skin of the breast in a diamond pattern every centimeter down to the meat. Season the breast with black pepper and salt, and place skin side down on a cold griddle.

Step 2

Turn the burner to medium heat and roast the breast for 10-12 minutes. Turn the breast skin-side up and roast for another 5-6 minutes.

Step 3

While the duck is roasting, wash and dry the fruit. Peel off the pear skin and cut the fruit into small slices, removing the core beforehand.

Step 4

Melt butter in a separate pan, add sugar. When the sugar begins to caramelize, add the apple and pear slices to the pan. Season the fruit with pink pepper peas, black pepper and salt. Simmer the fruit for 8-10 minutes. 2-3 minutes before the fruit is done, add the balsamic vinegar to the fruit and let it evaporate.

Step 5

Let the breast rest for 5-6 minutes and then cut into thin slices.

Step 6

Place the slices of caramelized fruit on a plate, next to the slices of roasted duck breast, pour 1 tbsp. of fruit sauce left in the pan over the dish and serve!
