Kutya is a traditional dish prepared on Christmas Eve and Old New Year's Eve. But it can be cooked on any day, because it can easily replace the boring oatmeal. Traditionally, kutya is made of wheat with poppy seeds (hungry kutya), adding raisins and nuts (rich kutya).

Ingredients


wheat 2 cups
poppy seeds 100 g
white raisins (seedless) 100 g
black raisins (seedless) 100 g
almonds (unroasted) 100 g
walnuts 100 g
pine nuts 100 g
honey 250 g
water

Instructions


Step 1

Pre-soak the wheat in water for 5-6 hours.

Step 2

Pour steep boiling water over the poppy and leave for 1-2 hours.

Step 3

Boil the wheat until tender and drain the water.

Step 4

Steam the almonds and raisins separately.

Step 5

Blend the poppy seeds.

Step 6

Peel the almonds and crush them in a mortar or chop them into small pieces.

Step 7

Mix wheat, poppy seeds, raisins, chopped walnuts, almonds and pine nuts. Add honey.

Step 8

Pour the ready porridge with pre-boiled and cooled water. The water should be about twice as much as the porridge. But its amount can vary depending on how thick you like your porridge.

Instead of water, you can pour chilled compote over the kutya. Instead of pine nuts, you can use cashews, hazelnuts or any other nuts. Instead of wheat, you can use bulgur or a mixture of three kinds of grains (wheat, oats and rice).
