Step 1
Grate the zest of the lemon. Squeeze the juice from the lemon and put it all into a saucepan, adding sugar. Add the port wine and put the pot on low heat.
Step 2
Stir and wait for the sugar to dissolve, and at the same time put the kettle to boil. If the sugar has dissolved, remove the pot from the fire and pour a glass of boiling water into it, then cover it with a lid and let it stand.
Step 3
Strain and serve.
