Alu Patras (fried potato rolls)

Alu patras - fried potato rolls.

Ingredients


wheat flour 200 g
water 120 ml
vegetable oil 20 ml
turmeric 1 tsp.
salt 1 tsp.
red pepper 1/2 tsp.
melted butter 80 g
BUTTER:
peeled warm boiled potatoes 0.5 kg
coconut shavings 45 g
white and black sesame 30 g
parsley 20 g
curry
dried ground ginger
black pepper
salt

Instructions


Step 1

Combine the flour, water, salt, vegetable oil, turmeric and red pepper. Knead the dough, cover with clingfilm and leave for 30 minutes.

Step 2

Mash the potatoes with a potato masher, add the chopped parsley, salt, black pepper, curry, ginger, coconut and sesame seeds. Stir.

Step 3

Dust the table with flour, roll out the dough into a 30x30 cm square and spread the filling over it. Roll up into a tight roll and cut into 1.5 cm thick slices.

Step 4

Fry the alu patras in ghee for 4-5 minutes on each side. Enjoy.
