One of the Italians' favorite first courses is Strachatella soup.
chicken broth 1 liter |
eggs 3 pcs |
grated parmesan cheese 120 g |
semolina 2-3 tbsp. |
spinach (s/m) 300 g |
TO TASTE: |
salt |
black pepper |
nutmeg |
Step 1
Pour the semolina into the boiling broth, stirring constantly.
Step 2
Beat the eggs, mix with the cheese, salt, pepper and nutmeg. Add the mixture to the soup.
Step 3
Then put in the spinach squeezed from moisture. Stir, simmer for a couple minutes and serve the soup. Enjoy.
