 
"Coronochka" by Andrey Dromov — pork heart with coriander, potato-beet puree and pickled cucumbers.
| pork heart 1 pc | 
| butter 30 g | 
| pickled cucumbers 150 g | 
| bay leaf 2-3 pcs | 
| ground coriander to taste | 
| black pepper peas to taste | 
| salt to taste | 
| MASHED POTATOES: | 
| potatoes 350 g | 
| cream (30%) 30 ml | 
| butter 20 g | 
| beet juice 20 ml | 
| salt, black pepper to taste | 
Step 1
Soak the pork heart in water for 2 hours. Then pour boiling water over it, add salt, bay leaf and peppercorns. Depending on the size, simmer for 2-3 hours.
Step 2
Cut the cooled heart into pieces and fry in butter with coriander.
Step 3
Prepare the mashed potato. Boil shredded potatoes in salted water, mash, add butter, cream, beet puree and mash well.
Step 4
Serve the heart with mashed potatoes and pickles, sprinkled with black pepper. Bon appetit!
