 
Italian breakfast - crispy piadines with ham, tomatoes and mozzarella cheese.
| SCONES: | 
| wheat flour 160 g | 
| olive oil 40 ml | 
| water 80 ml | 
| salt 1/2 tsp. | 
| FILLING: | 
| ham 100 g | 
| tomatoes 250 g | 
| basil leaves 15 g | 
| arugula (or mixed salad) 30 g | 
| soft mozzarella 120 g | 
| oregano to taste | 
Step 1
Combine the water, olive oil, salt and flour. Knead the dough, wrap in clingfilm and put in the refrigerator for 30 minutes.
Step 2
Then dust the table with flour, divide the dough into 4 pieces and roll out thinly. Prick the tortillas with a fork and fry in a dry frying pan until browned.
Step 3
Then place slices of tomato, cheese and ham on each flatbread, sprinkle with oregano, add basil and arugula leaves. Fold the flatbread in half and serve. Enjoy.
