Summer, refreshing, invigorating and healthy soup - cholodnik.
beet 250 g |
cucumber 160 g |
radish 80 g |
dill 10 g |
parsley 10 g |
green onion 20 g |
garlic 2 cloves |
hard-boiled eggs 4-5 eggs |
lemon juice 25 ml |
apple cider vinegar 40 ml |
fat sour cream 100 g |
cold boiled water 900 ml |
hot water 100 ml |
zest of 1 lemon |
sugar 3 tbsp. |
salt, black pepper to taste |
Step 1
Wash and dry beets, wrap in foil and bake at 180 degrees for 30-40 minutes. Then let it cool down, peel and grate on a coarse grater.
Step 2
Dissolve the sugar in hot water. Add grated cucumber and radish, chopped herbs, lemon zest and diced eggs to the beets.
Step 3
Squeeze garlic, pour in vinegar and lemon juice, put salt and pepper. Add cold and cooled sweet water, mix everything well.
Step 4
If desired, put the soup in the refrigerator for a couple hours. Serve with sour cream. Bon appetit!
