Everyone knows and loves Mimosa salad as interpreted by chef Andrey Dromov — without potatoes and with green onions. Traditionally, this salad is served with canned mackerel, pink salmon or sardine. We will use smoked saira, because it has a special flavor and, believe me, you will understand the difference.
Mimosa salad appeared in the early 70s of the last century, and the main ingredients are canned fish, boiled eggs, onions, cheese and all dressed with mayonnaise. The salad was named after the flower it resembles.

FOR HOMEMADE MAYONNAISE: |
vegetable oil 250 ml |
egg 1 pc |
mustard 1 tsp. |
sugar 1/2 tsp. |
salt 1/4 tsp. |
lemon juice 1 tbsp. |
Step 1
Prepare the mayonnaise. In the bowl of a blender, beat the egg with salt, sugar and mustard. While continuing to whisk, pour in sunflower oil in a thin stream. Then add the lemon juice and stir. Transfer the ready mayonnaise into a culinary bag, cut off the tip and start assembling the salad.
Step 2
Lay out all the ingredients in layers, smearing with mayonnaise. Finely diced saira fillet, chopped green onions, coarsely grated carrots and coarsely grated protein. Then on the edge of the form lay out the coarsely grated cheese, and in the center - finely grated egg yolk. Bon appetit!
