Light flavorful and rich soup of dried mushrooms with root vegetables and noodles
| dried mushrooms 40 g |
| chicken thighs 2 pcs |
| water 2 liters |
| onion 1 pc |
| assorted root vegetables 300 g |
| potatoes 300 g |
| noodles 60 g |
| parsley and dill 20 g |
| salt to taste |
| pepper to taste |
| soup seasoning to taste |
Step 1
Boil the thighs and onion in salted water.
Step 2
Soak the mushrooms in cold water.
Step 3
Grate the root vegetables on a coarse grater.
Step 4
Remove the onion from the broth, put in the mushrooms, grated root vegetables and chopped potatoes. Add the seasoning to the soup and simmer for 30 minutes.
Step 5
10 minutes before the end of cooking, put the noodles in the soup.
Step 6
