 
Exquisite cold appetizer of beef tongue with green salsa
| beef tongue 1 pc | 
| onion 200 g | 
| garlic 6 cloves | 
| zest of 1 lemon | 
| bay leaf 7 pcs | 
| black pepper 6 peas | 
| cloves 4 buds | 
| cardamom 2 stars | 
| thyme to taste | 
| sea salt to taste | 
| SALSA: | 
| red onion 30 g | 
| green onion 10 g | 
| parsley 10 g | 
| cilantro 10 g | 
| honey 10 g | 
| light mustard 15 g | 
| white wine vinegar 20 ml | 
| olive oil 40 ml | 
| fresh chili pepper to taste | 
| salt to taste | 
Step 1
Put the tongue, onion, garlic and salt in a saucepan. Fill with boiling water and add the spice bag and zest. Depending on the size, simmer for 2-3 hours, then peel the tongue from the skin.
Step 2
For the salsa, chop and combine the red onion, herbs and chiles. Add the rest of the ingredients and stir to combine.
Step 3
Cut the tongue lengthwise in half, spread the salsa on it and serve. Enjoy!
