Exquisite, with flirty pompoms, bright creamy flavor and velvety texture, classic Parisian brioches
wheat flour 350 g |
water 40 ml |
eggs 3 pcs |
yolk 1 pc |
salt 5 g |
sugar 40 g |
dry yeast 8 g |
softened butter 125 g |
Step 1
Combine the sifted flour with the salt, sugar, yeast and egg/water mixture. Knead the dough. Add the butter and knead for another 10-15 minutes. Then cover and leave at room temperature for 1 hour.
Step 2
Dust the dough with flour, knead, cover again and leave in the refrigerator for at least 8 hours.
Step 3
After this time, place the dough on a table dusted with flour and divide into 10 pieces. Shape each piece of dough into a skittle by rolling it with the edge of your palm. Make a hole in the larger part of the skittle and slip the smaller part into it. Place the buns in the buttered molds. Cover with a towel and leave in a warm place for an hour and a half.
Step 4
Then brush with egg yolk and bake for 12-15 minutes at 190℃. Enjoy.
