Step 1
Rub the sifted flour with the butter and a pinch of salt and the yolks with the baking powder. Combine the two mixtures, add the vanilla sugar and orange zest. Knead the dough, cover with clingfilm and leave in the fridge for 30 minutes.
Step 2
Grease the mold with butter, spread the dough over the bottom and sides and prick with a fork. Bake the cake for 10-15 minutes at 170 degrees.
Step 3
Prepare the filling. Separate the yolks from the whites. Add zest, half of the orange juice and 300 grams of sugar to the yolks. Dilute the starch in the other half of the juice and add to the yolks. Stir.
Step 4
Beat the whites with a pinch of salt until stiff peaks, then mix them into the yolk mixture. Fill the cake with the mixture and send it to the oven heated to 180 degrees for 20 minutes.
Step 5
Prepare candied oranges. Mix water and 150 grams of sugar. Boil for 10-15 minutes. Add the orange fraiche, bring the mass to a boil. Cut two oranges into circles, 5-6 millimeters thick. Boil them in the syrup for 10 minutes, then discard them on a sieve and let them cool. Place the oranges on the pie. Sprinkle with flaked almonds, garnish with mint and meringue, if desired.
