Meaty turkey croquettes with gourmet smoked roasted pepper and peanut sauce

balsamic vinegar (white) 15 ml |

peanuts (bacon flavor) 40 g |
xanthan 1/4 tsp. |
smoked paprika 1/2 tsp. |

Step 1
Prepare the sauce. Combine the peeled roasted peppers, peanuts, broth, smoked paprika, sugar, salt, soy sauce, balsamic vinegar and cream in the bowl of a blender. Stir until smooth. Afterward, add the xanthan and beat again. Then add the olive oil and beat again.
Step 2
Prepare the stuffing. Grind the turkey meat twice, using the finest grating. Fry 25 grams of flour (1 tbsp.) in butter until golden, pour in the milk and broth. Add the chopped onion, parsley, chili pepper and nutmeg. Stir and combine with the turkey. Add salt, pepper, lemon juice and stir to combine. When the stuffing has cooled, cover with cling film and place in the fridge for 2 hours.
Step 3
Prepare the croquettes. Grease your hands with oil and form small balls of minced meat, coat them in flour, then in egg and then in breadcrumbs and deep-fry on medium heat for 12 minutes.
Step 4
Serve the croquettes with the smoked sauce.
